BANANA-NUT CAKE | |
1/2 c. butter 2 1/2 c. sugar 2 med. size bananas 3 egg yolks 1 tsp. baking soda 1 1/2 c. buttermilk 3 c. flour 1 tsp. vanilla 1 c. pecans or walnuts 3 egg whites Cream butter and sugar. Add mashed bananas and well beaten egg yolks. Dissolve soda in buttermilk and add flour and milk alternately to first mixture. Add vanilla and nuts. Fold in stiffly beaten egg whites. Bake in tube pan or a 9"x13" pan at 350 degrees until cake tests done, 45 to 60 minutes. FROSTING: Mash a banana and thicken with powdered sugar. After you put the frosting on cake sprinkle with pecans. |
