SCALLOPED PEPPERS 
4 bell peppers, quartered and seeded
Coarse cracker crumbs
Cheddar cheese
butter
Salt and pepper to taste
Milk (condensed or other)

Parboil the peppers about 7 minutes; drain and cut into small pieces. Put layer of crumbled crackers on bottom of a greased casserole then a layer of chopped peppers. Dot with butter and cheese, salt and pepper. Repeat with another layer of peppers, crumbs, butter, cheese, salt and pepper.

Continue until the dish is about 3/4 full then pour milk into dish until it comes up to the level of the peppers, crackers, etc. Bake in 350 degree oven about 30 minutes or until top layer of cheese and crackers are nicely browned.
