PINEAPPLE OATMEAL COOKIES 
1/2 c. shortening
1 c. sugar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1 egg
1 c. (8 1/2 oz. can) crushed pineapple, undrained
1 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 c. rolled oats
1/2 c. chopped nuts

Cream shortening, sugar and spices. Beat in egg. Stir in pineapple, then add flour sifted with soda, and salt; add rolled oats and nuts. Mix well, drop by teaspoons on greased cookie sheet. Bake at 375 degrees for 12 to 15 minutes.
