PINEAPPLE PUDDING CAKE 
1/2 to 1 c. chopped nuts
1 c. flour
1 cube butter

Mix and spread into 9 x 13 inch pan. Bake 20 minutes at 325 degrees and cool.

1 (8 oz.) cream cheese
1 c. powdered sugar
1 c. Cool Whip

Soften cheese with a little milk, mix and spread on crust.

2 eggs
2/3 c. sugar
3 tbsp. flour
1/2 of 20 oz. can cream pineapple
1/4 c. lime or lemon juice
1/2 pt. whipped cream (or Cool Whip)
Flaked coconut

Beat eggs in saucepan and add sugar, flour, crushed pineapple, citrus; cook until thick and spread on cheese layer.

Top with whipped cream or Cool Whip and flaked coconut. For color add color to a little milk and toss coconut in mixture.
