PITTSBURGH POTATOES (EA) | |
1 qt. raw potatoes, cut in 1/2" cubes 1 med. onion, chopped 1/2 tsp. salt 1/2 sm. jar pimento, chopped 2 hard boiled eggs 2 c. med. white sauce 1/2 lb. Old English cheese Cook potatoes and onion in boiling water 5 minutes. Add pimento and cook 7 minutes more. Drain. Make white sauce and add cheese and blend. In buttered casserole place a layer of potatoes then 1/2 white sauce. next cut eggs over this. Add balance of potatoes and top with the remaining sauce. Bake in a moderate oven as you do scalloped potatoes. |
