CAJUN CAKE 
2 c. flour
1 1/2 c. sugar
2 tsp. baking soda
2 eggs, well beaten
1 lg. can pineapple, crushed plus juice

Sift flour, sugar and soda into bowl. Add beaten eggs and pineapple. Mix well. Bake at 350 degrees for 30-40 minutes.

TOPPING:

3/4 c. sugar
1 stick butter butter
1/2 c. Carnation cream (Pet Milk/evaporated)
1 c. coconut
1 c. chopped pecans

Put sugar, cream and butter in saucepan and bring to a boil. Boil for 1 minute. Remove from heat and let stand for about 5 minutes. Add coconut and pecans. Mix well, then pour over cake.
