OVER EASY PORK CHOPS 
6 pork chops, 3/4-inch thick
1/4 c. butter (1/2 stick)
1 c. saltine cracker crumbs
3 tbsp. grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper
1 beaten egg
2 tbsp. milk

Melt butter in baking pan. In shallow bowl or pie plate combine crumbs, cheese, salt and pepper. In another shallow bowl blend egg and milk. Coat chops with crumb mixture, dip in egg mixture and again in crumbs. Place in baking pan. Bake 45 minutes at 350 degrees; carefully turn chops and bake another 45 minutes. If they get too brown, cover at the last part of baking. Serves 6.
