LIGHT AND CHEESY BROCCOLI
CASSEROLE
 
1 med. size bunch fresh broccoli, destemmed and flowered
1 (8 oz.) carton sour cream
1 c. creamed (small curd) cottage cheese
1/2 c. Bisquick baking mix
1/4 c. melted butter
2 eggs, beaten
1/2 c. grated cheese (sharp, mild, morzelli, Parmesan your preference)

Lightly grease an 8 x 8 x 2 inch baking dish. Spread broccoli florets in dish.

Beat sour crema, cottage cheese, Bisquick, butter and eggs with a hand mixer for approximately 1 minute. Pour over broccoli. Arrange slices of tomato on top and sprinkle with cheese. Bake until golden brown and knife inserted halfway between center and edge comes out clean, about 30 minutes in 350 degree oven.
