BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe banana
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
Nuts (optional)

Cream shortening and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in banana. Sift together dry ingredients, add to banana mixture; mix well. Pour into greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30-35 minutes. P.S. You may use self-rising flour and omit soda and salt.
