KONA - BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. real ripe bananas, mashed
1 1/4 c. sifted all-purpose flour (may use self-rising but omit soda and salt)
3/4 tsp. baking soda
1/2 tsp. salt

To mix: Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in bananas. Sift dry ingredients to banana mixture and mix well. Pour in a well-greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30 to 35 minutes. You may add some pecans, if you wish.
