KONA BANANA COFFEE BREAD 
1/2 c. butter, softened
1 c. sugar
2 eggs
3/4 c. mashed ripe banana (2 med. size)
1 1/4 c. sifted all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients; add to banana mixture, mix well.

Pour into greased 9x9x2 inch pan or use muffin tins. Bake in a 350 degree oven for 30 to 60 minutes. Test for readiness. 30 minutes for muffins.
