BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe banana
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, 1 at a time, beating well after each. Stir in banana. Add dry ingredients to banana mixture; mix well. Pour into greased 9"x9"x2" pan. Bake at 350 degrees for 30 to 35 minutes.
