BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe banana
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients, add to banana mixture, mix well. Pour into greased 9"x9"x2" pan. Bake at 350 degrees for 30 to 35 minutes.
