BAKLAVA 
2 c. sugar
1 1/2 c. water
1 tsp. lemon juice
2 c. chopped walnuts
1 tsp. ground cinnamon
3 tbsp. sugar
1 lb. filo dough
1 1/2 c. clarified butter
1/2 inch diameter dowel

Prepare the syrup by boiling together the sugar and water until sugar is dissolved. Add the lemon juice. Continue boiling for 8 to 10 minutes. Remove from heat and cool; set aside.

To make the filling, combine the walnuts, cinnamon and sugar, mixing well; set aside.

Take one sheet of filo dough, fold in half widthwise and brush with butter. Sprinkle 1 1/2 tablespoons of filling over the buttered dough. Loosely roll up the dough around the towel. Place the bourmus on greased cookie sheets. Brush each pastry with melted butter. Bake at 350 degrees for about 20 minutes. Pour the cooled syrup on the hot pastries and serve.
