DIRTY RICE 
2 c. cooked rice
1 c. ground chicken livers & gizzards

Boil gizzards and livers until tender, then grind.

Combine: 1/2 c. ground onion & parsley 2 tbsp. butter

Saute beef liver and gizzard mixture, onions and parsley in butter until onion is golden brown. Mix with cooked rice, season with salt and pepper. Mix Tabasco to mixture (use Tabasco to taste). Serve with green salad.
