SHERRIED SHRIMP CASSEROLE | |
1/4 lb. fresh sliced mushrooms 2 tbsp. butter 1 lb. fresh shrimp, cooked, cleaned & deveined 2 c. cooked rice 1 1/2 c. sharp cheddar cheese, shredded 1/2 c. heavy cream 2 tbsp. ketchup 2 tbsp. sherry 1 tbsp. Worcestershire sauce Salt & pepper to taste 1/4 tsp. paprika Saute mushrooms in butter. Mix with shrimp, rice and cheese. Combine cream, ketchup, Worcestershire sauce, sherry, salt and pepper. Add to shrimp mixture. Sprinkle paprika on top and bake in 2 1/2 quart baking dish for 20 minutes in 350 degree oven. Serves 4 to 6. |
