CHAMPAGNE CHICKEN 
2 (4 oz.) pieces chicken
1/2 onion, diced
1 pkg. leaf spinach (fresh)
1/2 pkg. mushrooms
2 oz. sour cream
2 oz. heavy cream
1 1/2 oz. Madeira wine
Sprinkle sage

Dredge chicken in flour, saute. Saute onion until translucent. Add mushrooms. Stir until cooked. Add fresh spinach. Cook 2 minutes until wilted. Add Madeira wine, sour cream and heavy cream. Season with salt, pepper and fresh sage. Add chicken.
