TABOULI 
1 c. cracked wheat (cover with warm water & salt & soak until soft)
2-3 tomatoes
3-4 stalks scallions
2 tbsp. mint
Juice of 1 lemon
1/4 c. parsley
1/4 c. olive oil

Mix together all ingredients. Add olive oil, mint and salt to taste. Serve on triangles of Syrian bread. Top with crumbled feta cheese. Refrigerate. Keeps approximately 3 days.
