SALMON BISQUE 
1/2 lb. fresh salmon
4 tbsp. butter
1/4 c. sliced green onions
1 clove minced garlic
1/4 c. flour
2 c. milk
3 c. cream or half & half
1/2 c. tomato puree
2 tbsp. sherry
1 tsp. salt
1 tbsp. chopped dill
Dash of white pepper

Poach salmon. Cool, flake and set aside. Melt butter. Stir in onions and garlic and saute a few minutes. Blend in flour. Cook and stir for 5 minutes. Slowly, whisk in milk and cream until thickened. Add salmon, puree, sherry, salt, dill and white pepper. Cover and simmer 15 minutes. Garnish with dill or paprika.
