TOMATO PUDDING | |
1 (No. 2) can tomatoes (I use 2 c. tomato juice) 1 c. brown sugar 1 tsp. salt 3/4 c. boiling water 3 c. white bread cubes 1/2 c. melted butter Strain tomatoes through a sieve, crushing pulp thoroughly to release every drop of juice. Add brown sugar and salt (don't faint at the amount of sugar, it does wonders with tomatoes) and stir well. Then add boiling water and let it bubble away on the stove for about 5 minutes. Start your oven at 375 degrees. While tomatoes are cooking, cut bread into small cubes, using fresh or stale bread and put in medium size casserole. Pour melted butter over cubes, stir, then add the boiling tomato mixture. Stir again. Bake for 50 minutes. Serves 6. |
