CURRIED BEEF PITA | |
1 lb. ground beef 1 med. onion, diced 1 garlic clove, halved 1 tbsp. curry powder 1 med. zucchini, diced 1/2 c. water 1 1/4 tsp. salt 1/2 tsp. sugar 1/4 tsp. pepper 1 med. tomato, diced 1 (9 oz.) pkg. sandwich pockets (Pita bread) In 10 inch skillet over medium heat, cook ground beef, onion, garlic and curry powder until meat is browned and onion is tender, about 10 minutes, stirring frequently; discard garlic. Add zucchini, water, salt, sugar and pepper; heat to boiling. Reduce heat to low; cover and simmer 15 minutes or until zucchini is tender, stirring occasionally. Stir in tomato; heat through. Meanwhile, cut each sandwich pocket in half, place on cookie sheet and heat until warm, about 5 minutes. Spoon mixture into sandwich pockets. |
