CHOPPED BEEF CURRY | |
1 tart apple, peeled, cored & chopped 2 med. onions, finely chopped 1 garlic clove, minced 1 lb. lean beef, ground 2 tbsp. curry powder 1 tbsp. vegetable oil 1 tsp. salt 1/2 c. diced celery 1/3 c. raisins 1/4 c. flaked coconut 1 (10 1/2 oz.) can beef gravy 1 (8 oz.) can tomato sauce Saute apple, onions and garlic in oil for five minutes. Add beef, break up with fork; brown slowly. Sprinkle with curry powder and salt. Add remaining ingredients, mix well. Simmer, covered, about 1 hour. Serve hot on hot, fluffy rice, with any desired curry accompaniments. Makes four servings. |
