HOT POTATO SALAD 
8-10 med. potatoes, peeled and cubed
1 1/4 to 1 1/2 c. mayonnaise
1 tsp. mustard, dry
1 med. onion, chopped
3/4 lb. Velveeta cheese, cubed
Salt and pepper to taste
1/2 lb. bacon, cooked, drained and crumbled
Chopped black olives; optional

Cook potatoes until tender. Can be microwaved or boiled. Drain. Place potatoes in casserole. Mix together mayonnaise, mustard, onion, cheese, salt, and pepper. Add and mix well. Sprinkle bacon over top of casserole. Sprinkle olives over top if desired. Bake at 350 degrees approximately 30 minutes or until bubbly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
