BEEF - OLIVE STEW WITH RICE 
2 lbs. stew beef, cut into 2 inch cubes
1 lg. green pepper, diced
2 (1 lb.) cans whole tomatoes, undrained
1 lg. onion, chopped
1 (7 oz.) jar olives, undrained
1 c. raw rice

Put meat in crock pot; add remaining ingredients, except rice. Cover and simmer at setting #3 4 1/2 to 5 hours. One hour before serving, add rice, stirring gently. Keep warm for serving at setting #2. Serves, 6-8.

It didn't fit the look of what I picture when I hear "stew", but this was very good. I was doubtful with the limited ingredients, and I did add an Anaheim pepper, but it was really easy and the fam ate it all.

I've been making this stew for decades. I found the recipe in the booklet that came with my college crock pot.

The stew is delicious. I tend to use a 10-oz jar of olives because I like olives. I also used pork instead of beef the last time and it came out fine. I've done it a couple times with lamb and it was not as good as I'd envisioned.

Overall, it is an easy and delicious recipe.
