MUSHROOMS ON ENGLISH MUFFINS 
1 lb. fresh mushrooms, sliced
1 (2 oz.) jar pimientos, drained, diced
1/3 c. Amaretto di Saronno
Salt, freshly ground black pepper
2 tbsp. butter
1 c. dairy sour cream
1 1/4 tsp. Worcestershire sauce
English muffin halves, toasted

Saute mushrooms in butter for 2 or 3 minutes. Butter muffin halves. Add mushrooms, pimientos, Amaretto, sour cream, Worcestershire sauce, salt and pepper. Continue cooking over low heat until mixture thickens. Serve on buttered muffin halves. Makes 4 servings.
