BUTTERMILK BISCUITS 
2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda (increase to 1/2 tsp. if milk is very sour)
1 tsp. salt
1 c. buttermilk (about)
2 tbsp. lard

Sift dry ingredients together and blend with lard. Add sufficient milk, about one cup, to make soft dough. Roll out to 1/4 to 1/2 inch in thickness; cut out with biscuit cutter. Place in pan and bake at 350 degrees for about 10 minutes or until brown.

To make powder biscuits, use sweet milk, omit soda and increase baking powder to 3 teaspoons. Step up heat to 375 or 400 degrees and bake about 10 minutes or until desired shade of brown.
