IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick baking mix
2 tbsp. butter
1 c. (13 oz.) evaporated milk (may substitute low fat milk)
2 eggs
1 c. (16 oz.) pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Grease pie pan or spray with Pam. Beat all ingredients until smooth, 1 minute in blender on high or 2 minutes with hand beater. Pour into pie pan. Bake until knife inserted in center comes out clean, 50 to 55 minutes. May substitute 1 cup (16 ounces) mashed sweet potatoes, cooked or 1 cup (16 ounces) cooked squash.
