OLD - FASHIONED SOFT MOLASSES
COOKIES
 
6 c. all-purpose flour
1 tsp. baking powder
1 1/2 tsp. ground ginger
1 tsp. salt
1 c. lard
2 c. brown sugar, firmly packed
3 eggs
1 c. dark molasses
1 tsp. baking soda
1 1/2 c. hot water
Granulated sugar

Sift the flour, measure and re-sift with next 4 ingredients 3 times. Cream lard and brown sugar thoroughly. Add eggs, one at a time and beat mixture thoroughly after each addition. Stir in molasses. Stir in flour mixture. Then add the combined soda water. Mix thoroughly. Drop by heaping teaspoonfuls onto greased baking sheet and sprinkle with granulated sugar.

Bake in a preheated 375°F oven for 8 to 10 minutes. Remove to cake racks to cool before serving or storing.

Makes 8 to 9 dozen cookies.
