4 c. hot potatoes, mashed
8 oz. cream cheese
1 egg
1/4 c. pimentos
1/3 c. finely chopped onion

Mix together and bake in 350 degree oven for approximately 45 minutes. May top with grated Cheddar cheese, but not necessary.
