CAULIFLOWER CASSEROLE | |
1 med. head cauliflower Water 3 tbsp. butter 1/4 c. flour 2 c. milk 3/4 tsp. salt 1/8 tsp. pepper 1 (8 oz.) pkg. herb seasoned stuffing 1 c. water 1/2 c. melted butter Break cauliflower into small pieces and place in a saucepan with about 1 inch boiling water. Cover and simmer until tender, drain and place in a shallow 2-quart casserole dish. Melt butter in a medium saucepan. Stir in flour and cook together for a few minutes, stirring constantly. Remove from heat and blend in milk, salt and pepper. Bring to boil, stirring constantly and simmer until thickened. Pour sauce over cauliflower in casserole. Mix stuffing, water and melted butter and spread evenly on top of ingredients in casserole. Bake at 350 degrees for 30 minutes. Makes 8-10 servings. Broccoli may also be used in place of cauliflower. Very good. |
