VEGGIE CHOWDER 
3 tbsp. butter
1 sm. red pepper, chopped
1 sm. onion, chopped
1 tbsp. flour
1 1/2 c. water
1 med. potato, pared and diced
3 c. milk
1 pkg. (10 oz.) frozen mixed vegetables
1 tsp. salt
1/4 tsp. thyme
1/8 tsp. pepper
1 can (7 oz.) whole kernel corn

In large saucepan, melt butter over medium heat. Add red pepper and onion. Cook. Add flour. Cook, stirring, 1 minute.

Gradually add water, potatoes, frozen vegetables, salt, thyme and black pepper. Heat to boiling, breaking up frozen vegetables. Cover and cook until potatoes are tender, about 10 minutes, stirring occasionally. Stir in milk and corn. Heat through.
