VEGETABLE CHOWDER | |
1 (16 oz.) pkg. frozen broccoli or asparagus 3 med. leeks 1/2 lb. fresh mushrooms or 2 (5 oz.) jars of slices 6 tbsp. butter 3 tbsp. flour 1/2 tsp. salt Pepper 1 (12 oz.) can corn 2 c. light cream 2 c. chicken broth 1 sm. jar chopped pimentos Slice mushrooms. Slit and clean leeks, chop in food processor with broccoli or asparagus. Saute broccoli or asparagus, leeks and mushrooms until tender in butter. Stir in flour, salt and pepper. Add broth and light cream; cook and stir until thickened. Stir in corn with liquid and pimentos. Heat through but do not boil. |
