CREAMY TURKEY CROQUETTES 
1/4 c. butter
1/4 c. flour
2 tbsp. minced onion
1 tsp. salt
1/2 tsp. poultry seasoning
1/8 tsp. pepper
3/4 c. milk
2 c. finely chopped, cooked turkey
2 tbsp. minced parsley
1 egg, slightly beaten
2 tbsp. water
1/2 c. dry bread crumbs
3/4 c. salad oil

Melt butter in a saucepan. Add flour, onion, salt, poultry seasoning and pepper and blend. Gradually add milk and cook over a low heat until thickened. Stir in turkey and parsley. Mix thoroughly. Pour mixture into a shallow pan and chill in refrigerator for several hours. Shape mixture into 6 flat croquettes. Mix beaten egg and water. Dip croquettes in bread crumbs, then egg mixture. Then bread crumbs. Heat electric fry pan to 390 degrees. Add salad oil, and fry croquettes for 3 to 4 minutes on each side or until golden brown. Drain on absorbent paper. Makes 6 croquettes.
