CHICKEN OR TURKEY CROQUETTES 
Make a white sauce of:

4 tbsp. flour
4 tbsp. butter
1 c. milk

Cook 3 to 5 minutes, then remove from heat and add:

1/2 tsp. salt
1/4 tsp. pepper
1 tsp. onion, chopped
3 c. chopped fowl

Chill 1 hour. Shape into cakes. Dip into bread crumbs, then into a mixture of 1 egg and 2 tablespoons water. Then into crumbs again. Fry in oil until nicely browned.
