OLD FASHIONED RICE PUDDING 
1 1/2 c. milk
Pinch of salt
5 tbsp. sugar
1 tbsp. butter, melted
1 tsp. vanilla
5 eggs, beaten
2 c. long grain rice
1 tbsp. fresh lemon juice
Cinnamon for topping

Mix all ingredients except the rice, lemon juice, and cinnamon. Mix then well, them add the rice and lemon juice. Place in a 8 x 10 inch greased baking dish and sprinkle with cinnamon. Bake at 325 degrees for 50 minutes or until it is lightly brown and the custard is set. Test with a table knife. Stick it in the center of the dish and if it comes out clean, the dish is baked. In earlier times maple syrup was served on top of this pudding. Milk is enjoyed as well. Yields 6-8 servings.
