OLD FASHIONED RICE PUDDING | |
1 qt. milk 1 tsp. salt 2 eggs 1 c. uncooked long grain rice 1/2 c. raisins 1/2 c. sugar 1 tsp. vanilla 1 c. evaporated milk Bring milk and salt to simmer; stir in rice and raisins. Cook until rice is tender, about 5 minutes. Beat eggs in bowl with sugar, vanilla and evaporated milk; cook over low heat with 1 cup of rice mixture until thickened, about 15-20 minutes. Pour into a bowl, stirring frequently. Serve warm or chilled. Sprinkle with nutmeg. |
