APPLE CAKE 
1 1/2 c. sugar
1 c. vegetable oil
3 eggs
2 c. all-purpose flour
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. ground nutmeg
3 c. tart apples, chopped
1 c. coarsely chopped nuts

Heat oven to 350 degrees. Grease and flour 9x13 inch rectangular pan. Mix sugar, oil and eggs and blend well; beat for 1 minute. Stir in remaining ingredients except apples and nuts; beat 1 minute. Stir in apples and nuts. Pour into pan and bake in a 350 degree oven for 35 to 45 minutes or until a pick inserted into the center comes out clean. If you use self-rising flour, omit baking soda and salt.
