TWICE BAKED POTATOES 
8 med. baking potatoes
1/4 c. butter
1 c. warmed milk
1 egg
1 tsp. salt
1/2 tsp. pepper

Heat oven to 400 degrees. Wash potatoes and bake 1 hour or until tender. Cut baked potato in half and remove potato leaving a shell.

In large bowl mix potato pulp, milk, egg, salt and pepper. Beat with mixer until light and fluffy. Refill shells. Bake 1/2 hour at 350 degrees OR wrap and freeze for later use. Serves 8.
