SUMMER SQUASH 
6 c. summer squash, sliced (zucchini may be used instead)
1/4 c. chopped onion
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
1 (6 oz.) pkg. stove top stuffing, chicken flavor with seasoning packet
1/2 c. butter, melted

Cook squash and onion in water for 5-10 minutes, drain. Combine stuffing and butter.

Mix together vegetables, seasoning packet, cream of chicken soup and sour cream. Layer 1/2 of stuffing and butter mixture in the bottom of 12 x 7 x 2 inch baking dish. Spoon vegetable mixture on top. Sprinkle the rest of stuffing mixture over vegetables. Bake uncovered for 30 minutes at 350 degrees.

Serves 6.
