MAKE AND BAKE CHICKEN 
1 c. bread crumbs (seasoned or plain)
1/2 c. flour
1 tsp. cornstarch
1 3/4 tsp. onion powder
1 3/4 tsp. garlic powder
1 3/4 tsp. poultry seasoning
1 tsp. paprika
1 1/4 tsp. salt
1 tsp. sugar or substitute
1 tbsp. plus 2 tsp. oil

Mix well with pastry cutter all (but oil). Add oil. With clean fingers, mix well until blended well. You will feel no oil, just crumbs. Store in Tupperware or jar (sealed). Make as much as you like to have ready for next time. Refrigerate or freeze unused portion. Cut selected pieces, lightly salt; let stand 15 minutes. Heat oven to 400 degrees. Dip pieces one at a time into milk, then into mixture. Line cookie sheet or other pan with foil for easier cleaning.

If you have a rack, set in pan. Spray with Pam if desired. Place chicken, skin side up, in pan; cover with foil. Bake additional 1/2 hour or until tender. You do not have to turn this chicken.
