C.'S CHRISTMAS COOKIE | |
2 3/4 c. flour 1/2 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. ground cloves 1/2 tsp. grated nutmeg 3/4 tsp. powdered cardamom 1/2 c. finely chopped mixed candied fruits 1/2 c. chopped nut meats 1 c. corn syrup 3/4 c. brown sugar 1 tbsp. lemon juice 1 tsp. grated lemon rind 1 egg, beaten Preheat oven to 400 degrees. Sift together flour, soda and spices. Stir in candied fruits and nuts. Add corn syrup, sugar, lemon juice and rind to egg. Mix well. Cut rounds of waxed paper, about 4 inches in diameter; grease them; put onto greased baking sheet about 2 inches apart. Put tablespoon of dough on each round of paper. Bake 12 to 14 minutes or until lightly browned and firm to touch. When cold, decorate as desired with plain or chocolate glaze, cherries, nuts, etc. Yields about 24. |
