TWENTY MINUTE SWEET POTATOES | |
30 oz. sweet potatoes 1 1/2 tbsp. cinnamon 1 tsp. vanilla 2 lightly beaten eggs 1 c. sugar 1/4 c. melted butter 1 c. coconut 1 c. marshmallows 1/2 c. chopped pecans 1/2 c. brown sugar 1 1/2 casserole bowl 2 (1 qt.) mixing bowls Preheat oven to 400 degrees. Melt butter in casserole bowl. Pour butter into mixing bowl and add brown sugar; stir well; add coconut, pecans; stir and set aside. Drain potatoes. Mix with the juice; cinnamon, vanilla, beaten eggs and sugar. Mix well. Pour potatoes into casserole bowl; add liquid mixture. Add brown sugar mixture and top with marshmallows. Brown for about 20 minutes. |
