SHRIMP FRIED RICE 
4 c. cold cooked rice
2 eggs, well beaten
8 oz. cooked baby shrimp
Peanut oil or other oil for frying
1 med. onion, sliced thin
4 tbsp. soy sauce
2 tbsp. sherry
1/4 tsp. garlic powder
1/8 tsp. pepper

Add a little water to rice to loosen grains. Mix beaten eggs and shrimp; in a bowl.

In skillet or wok, heat oil and saute onions until tender. Add shrimp and eggs and cook over medium heat, stirring constantly. Add rice and cook 2 minutes, stirring constantly. Add last four ingredients and continue cooking for 2 minutes, stirring lightly.
