PIQUANT MUSHROOMS AND GREEN
BEANS
 
3/4 c. red wine vinegar
1/2 c. water
Artificial sweetener = to 6 tsp. sugar or use sugar
1 tsp. salt
1/2 tsp. oregano
1 bay leaf
1 garlic clove, split
5 peppercorns
2 cloves
4 c. mushrooms, quartered
4 c. whole green beans, trimmed or whole sugar snap peas

In medium saucepan, combine all ingredients except mushrooms and beans (or peas). Bring to a boil; add mushrooms. Reduce heat, cover and simmer 5 minutes. Using slotted spoon, remove mushrooms and transfer to serving dish. Add green beans or peas to simmering mixture; cover and simmer 10-15 minutes, until tender but not mushy. Remove beans and combine with mushrooms in serving dish. Pour liquid over vegetables and chill.
