CUCUMBER DIP 
1 lg. cucumber
1 (8 oz.) cream cheese
1 white onion

Grate peeled cucumber with a cheese grater. Drain liquid by putting cucumber pulp in strainer for 15-20 minutes. Chop white onion into small pieces; let cream cheese soften.

Combine all ingredients in a mixing bowl. Blend together with a hand mixer. Chill for at least 2 hours.
