CUCUMBER DIP 
1 lg. cucumber
1 (8 oz.) pkg. cream cheese
Salt & pepper
2 tbsp. finely chopped green onions
2 tbsp. lemon juice

Coarsely grate unpared cucumber, drain, reserving liquid. Stir cream cheese to soften, add lemon juice. Stir in onions and cucumber. Season with salt and pepper to taste. If too thick, thin with cucumber liquid. Serve with chips and snack crackers. Yield: 1 1/2 cups.
