TWICE BAKED POTATOES 
4 med. to lg. potatoes
1/2 tsp. baking powder
1 tsp. salt
Dash pepper
8 tbsp. butter
2 eggs
1/2 c. milk
2 tbsp. pimento diced fine
Paprika

Clean potatoes. Rub outside with butter. Bake 45 to 60 minutes in preheated 425 degree oven. Cut slice from top of each potato. Scoop out potato from inside. Mash with 1/2 tsp. baking powder, 1 tsp. salt and pepper. Pour in 8 tbsp. melted butter. Stir and blend in well. Add 2 beaten eggs followed by milk and pimento. Whip until light and fluffy. Spoon into shells. Sprinkle with paprika. Bake in 300 degree oven for 45 minutes until puffed high and lightly browned.
