GREEK SPINACH PIE 
1 lb. pastry shell (filo)
3 lbs. fresh spinach
1/2 bunch parsley
1 lb. feta cheese
5 tbsp. olive oil
2 c. olive oil
2 bunches green onions
2 tbsp. salt
12 eggs

Wash spinach well, removing coarse stems. Allow to drain. Mince spinach, green onions and parsley. Combine with salt and press firmly, pouring off excess liquid. Add crumbled cheese, eggs, and 5 tablespoons olive oil and mix well.

Grease 14-inch round pan and place 4 layers of filo on bottom, brushing olive oil between each layer. Save 4 sheets of filo for top of pie. Spread part of spinach mixture on pastry sheet, alternately with pastry sheet, olive oil and spinach mixture, until mixture is used. Cover with 4 layers of filo, brushing olive oil between each sheet. Bake at 300 degrees for 1 1/4 hours.
