DELMONICO POTATOES 
2 tbsp. butter
2 tbsp. flour
1 c. milk
Salt & freshly ground black pepper
3 lg. potatoes, boiled, peeled & cubed
1/2 sm. onion, thinly sliced
1/2 c. grated cheese
2 tbsp. butter
1/2 c. bread crumbs

Preheat the oven to 375 degrees.

In a saucepan melt the butter and stir in the flour. Simmer for 3 minutes. Pour in the milk all at once and stir. Cook over low heat until thick and season with salt and pepper. Stir in the potatoes and onion. Butter a baking dish. Layer half the potatoes in the dish. Top with a layer of half of the cheese. Follow with another layer of potatoes and one of cheese. In a skillet melt the butter and stir in the crumbs. Arrange over the potatoes and cheese. Bake for 30 minutes until cheese is melted and crumbs are golden brown. 4 to 6 servings.
