ENCHILADAS 
1 1/2 lbs. hamburger
1 onion
Taco seasoning or enchilada mix
Refried beans
Grated Cheddar cheese
Black olives (unpitted)
2 tomatoes
8 oz. sour cream
1 can tomato sup
1 can enchilada sauce (hot or mild)
Use any shell you desire

Brown hamburger and onions. Drain. Add taco or enchilada seasoning and beans and about 1/2 can water. Simmer 15 minutes. Fill shells with hamburger mixture, cheese, black olives, tomatoes and sour cream. Roll and place open side down in a greased cake pan. Mix tomato soup and enchilada sauce and pour over filled shells. Sprinkle with cheese. Cover and bake at 350 degrees for 45 minutes. Makes 8.
